BLACK BEAN AND CORN SALAD
1/4 cup fresh lime juice
1/3 cup olive oil1 clove garlic, minced
1/4 to 1/2 teaspoon salt (or to taste)
1/8 teaspoon ground cayenne pepper (or to taste)
2 (15 ounce) cans black beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained
1 avocado - peeled, pitted and diced
1 red bell pepper, cored and chopped
2 medium tomatoes, chopped
4 green onions, thinly sliced
1/4 to 1/2 cup chopped fresh cilantro (optional)
Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small bowl. Whisk until ingredients are well mixed.
In a larger bowl, combine beans, corn, avocado, bell pepper, tomatoes, green onions, and cilantro.
Pour dressing over the salad. Stir salad to coat vegetables and beans with dressing, and serve.
